2004 The Black Dog Shiraz
This is the fourth vintage of the Black Dog Shiraz and it continues where the 2003 left off.
The growing conditions of 2004 were excellent, with reasonably mild weather throughout which allowed for slow evolution of flavour and ripeness but a warm latter stage which has given the wine some power and weight. As a result, very good density of colour, aroma were achieved, but with a bit more finesse and elegance from previous years.
As for previous Black Dogs, this wine was fermented in the best possible French oak Barriques available. The wine was then racked and left to mature for 10 months in the individual barrels in which it was fermented. At 12 months, only the best barrels from the best coopers were selected to go into the final blend for a further 4 months.
The resultant wine is inky in color with rich, ripe licorice, mocha chocolate aromas which follow to dense flavours of plum, vanilla bean and cassis. Complex oak characters underpin the palate, helping to maintain a rich palate with loads of flavour, ripe tannins and a long finish.
