This Black Dog is a classically Australian styled Shiraz. It was fermented in small open topped stainless-fermenters, hand-plunged and drained off skins after seven days to finish fermentation in a combination of French and American oak barriques, 85% of which were new. Post ferment, the wine matured in these barrels for 14 months before being racked to tank, clarified and then bottled in September 2009.
Appearance: Dark plum red.
Nose: Freshly ground coffee, stewed plums and a background full of sweet spice - vanilla pod, nutmeg and cinnamon.
Palate: Rich, soft and expansive. Sweet plums, mocha and vanilla dominate early. Fine grained nutty-oak tannins draw the palate out and a twist of mouth-watering acidity cleanses on the finish.
Our 1.4 Hectare 'Black Dog' Shiraz block is both the highest and the most level vineyard on our Ferguson Valley estate. It sits on the best of the classic free draining WA "Marri soil" (a deep layer of ironstone gravely loam over reddish friable clay) of the Estate.
A wet winter and warm spring encouraged uniform growth in all varieties. An ideal flowering period marked the beginning of a long dry spell lasting until after the Shiraz was harvested in perfect conditions. A great vintage.
