The making of our blanc de blancs relies on building a core of fresh crisp fruit with layers of intrigue.

The components of complexity are enhanced by 100% barrel fermentation, yeast lees retainment and a guided malolactic fermentation.

A delightful fresh drinking Sparkling to enjoy now or allow to gain a little extra toasty bottle age with time.
Fresh but slightly cloudy juice is fermented in mature french oak with a cultured yeast. Some of the oak is also ioculated for Malo lactic fermentation.

Tasting Notes
Light toasty notes support aroma of grapefruit, nougat and baked bread with a lifted citrus zest. Fresh, citrus fruits and nuts backed by zesty acidity whilst holding a persistent bead in the glass.
Vineyard Notes
Estate grown from the spectacular hillside vineyard in the Ferguson Valley of the Geographe wine region, fruit is primarily sourced from our Clone 95 blocks. Soil is typically a deep layer of ironstone gravelly loam over red and yellow friable clay with slight easterly aspects at elevations of 220 to 250m above sea level.
Production Notes
The sparkling is bottled early to retain freshness and bright primary fruit character. The end result, a wine of interesting nuances highlighted by an expression of youth.
Winemaker Notes
A season in which we have had our hottest December days ever, our warmest nights since 2012 and our driest December since 2008 However despite these conditions being thought of as less than ideal, we could not be happier with the overall quality of the wines from the vintage, when all this occurred in tandem with the absence of our two nemeses, bushfires and birds! We did though experience a low yielding crop.
